High Sierra Brewing Co. makes three breweries in Sparks, Nev.

Baldini’s Casino will open the new High Sierra Brewing Co. brewery and taproom in late August, making it the third brewery in Sparks and the fourteenth in the Reno-Sparks area.

“The plans are to renovate the old buffet within the Baldini’s casino into a new 15-barrel production brewpub that will have a tap room, full kitchen, live entertainment and new patio,” High Sierra owner Jim Phalan wrote in an email. “The brewpub will stay High Sierra Brewing Co, LLC.”

Jim picked up the new brewery equipment at the Craft Brewers Conference in Denver April 9 and shipped it back to Baldini’s in the middle of the night April 13.

The taproom will seat over 150 customers and include two entrances, a main outdoor entrance on the north side and an entrance within the casino.

“We acquired the right make the award-winning beers that we served for the past three years,” Jim wrote. “However, we will have more flexibility to do seasonals, firkins (40 liters) and aged beers.”

High Sierra will also host beer tasting events and dinners featuring special creations from their kitchen paired with custom beers in the chef’s private dining room inside the brewery.

“We will be able to bottle, however, we are mixed about sticking with bottles or going with cans,” Jim wrote. “Cans seem to be an attractive, craft, and cost effective way to go at this time. Our primary goal is to get the brewery up and running and producing beer, then we will make the decision.”

Baldini’s Casino recently underwent a complete renovation, according to a press release. Baldini’s offers three restaurants, including High Sierra Brewing Co. as well as a gift shop and 5,000 square feet of banquet space.

“We are very excited to bring our award-winning beer and brewpub to Reno-Sparks,” Jim said, according to a Baldini’s press release. “While we truly enjoyed our run in Carson City the reality is that we have outgrown our facility and needed to expand.”
